12th November 2021- Foraging and Wildcrafting Series: Beginners to Intermediate ID Walk/ Edible, Medicinal, Toxic Fungi Wicklow Mushroom Foray with special guest forager

We will forage for and learn about edible, toxic and medicinal fungi. There will be a wild food drink and or taster as well.

I invite you to spend some time in the Wicklow hills and woodlands to forage for wild mushrooms with me.  We will learn how to identify and look out for toxic mushroom species and also discuss the medicinal qualities of mushrooms. Our aim for the day will be to identify at least one toxic, one edible, and one medicinal wild mushroom. We will also identify any other edible wild mushrooms we come across. This event is aimed at beginners to intermediate.
The group will be split into 2 as we will be joined by a special guest UK forager. Michael is a very qualified wild food forager with many years of experience and has so much to offer in sharing his skills and wisdom.
There is a fantastic array of wild fungi in Wicklow. I am so excited to share what I have learned with you.
You must dress appropriately for time spent outdoors, hiking boots and raingear are helpful.

7th Nov 2021 – Foraging and Wildcrafting Series: Fly Agaric- The Folklore, Mystique and Magic of this Toadstool

FULLY BOOKED!!!

We will forage for and learn about edible, toxic and medicinal wild fungi including the hunt for the alluring Fly Agaric Amanita muscaria. This mushroom is all of these things: edible, toxic, medicinal, entheogenic and more.

I invite you for a day spent in the Wild Wicklow hills and woodlands with me to forage for mushrooms and in particular to seek out the alluring red spotted toadstool, the Fly Agaric.

We will then gather to spend a couple of hours together to discuss it in more detail, covering the medicinal preparation for an effective external remedy for sciatica and how to detoxify this mushroom for food and so much more, about this famous but controversial fungus.

I’ve studied this mushroom in depth and am really excited to offer a day sharing the folklore, mystique, and magic of this beautiful mushroom. It has such a vivid and colourful history with its use as a mushroom that is: toxic, hallucinogenic (or rather entheogenic), medicinal and edible. How can all of these things be true?

The Amanita muscaria, or Fly Agaric is one of the most widely recognised mushrooms in the world. It adorns children’s stories, art, fairy tales, christmas cards and decorations and many a lawn ornament. But it is so much more than this.

I will share with you how to identify this mushroom during a foraging mushroom walk in Wicklow. We will learn how this mushroom has been used throughout history- what are facts and what are fiction in the stories we are taught about this much maligned mushroom.

We will discuss some of the many ways this fungus is used throughout the world as medicine and food and more. Make no mistake: This mushroom comes from the family of some of the most deadly mushrooms. Very importantly we will learn the clear parameters of what is safe and what is not when foraging for wild food and in particular for wild fungi.

*Please note: We will be seeing, touching, smelling, identifying, discussing, learning and appreciating this beautiful red and white toadstool. It is true that this is not a beginner’s edible mushroom. But we will learn fact from fiction and you will go home much empowered with new knowledge.

You must dress appropriately for a day spent outdoors, hiking boots are helpful. You must be physically fit for a day spent wandering the wilderness with hills and uneven ground. Please bring a packed lunch and snacks. And a foraging basket (if you have one).

31st October 2021 – Foraging Series: Wicklow Wild Mushroom Forage and Wild Food Tasters

We will forage for and learn about edible, toxic and medicinal fungi. We will enjoy some grounding time in nature and a wild food taster at the end of the session.

I invite you for a day spent in the Wild Wicklow hills and woodlands to forage for mushrooms and wild food with me. We will find a selection of edible species and discuss mushroom ID. We will enjoy a few tastes of wild food together at the end of the day. We will learn how to identify and look out for toxic mushroom species and also discuss the medicinal qualities of mushrooms.

Fly Agaric Amanita Muscaria Mushroom Foraging Ireland

We will spend the day in celebration of the local terroir through ceremony and wild food and learning about the folklore, mystique and magic of the Fly Agaric mushroom in particular, along with whatever other wild food we find on the day.

A foray coming up in Kent, UK with, interestingly, an emphasis on Amanita muscaria.

What: Fly Agaric and Friends: Explorations in medicine, food, and magic with Fergus the Forager and Courtney of Hips & Haws Wildcrafts, and guest mushrooms
Where: Kent UK and a local native woodland with diverse flora, fauna and fungi
When: Friday 22 October 2021 10am until 9pm (11 hour day)
 
There is a fantastic array of wild food and fungi in October, prime mushroom season! We will enjoy a long ramble in a beautiful woodland in Kent interspersed with wild local seasonal food to drink and eat and a forage for wild mushrooms including Fly Agaric. We will learn about the allure of the iconic Fly Agaric mushroom and how to safely use it as medicine and as food. There will be demonstrations including lacto-fermentation of mushrooms.  We will also learn about any other wild fungi that we come across.
We will provide lunch and a three course wild food dinner with some exciting ingredients for the meal, as of course Fergus is incredible talented and experienced as a wild food experimentalist. He has over 30 years experience as a wild food forager, so your more advanced questions can be answered too. 
We will be starting and ending the day in a location later to be announced to ticket holders.

Irish Fermentalists

For the fermentation enthusiasts out there, I’ve started a Facebook group called Irish Fermentalists.
This is a friendly informative group for beginners through to ‘experts’. Natural cheesemaking at Fumbally Stables 28 October 2017

I’m delighted to be a part of the Eat:Ith Food series in Fumbally Stables. Next week I’ll be teaching a half day workshop on natural cheesemaking. These will be simple basic cheeses that you can easily make from home using natural and renewable cultures such as milk kefir.

This is a hands-on workshop guided by Courtney Tyler, where you will get to make your own cultured milk recipes, including:

  • milk kefir
  • kefir strained cheese (cow’s milk)
  • raw chevre cheese (goat’s milk)
  • how to use whey

All participants will take home print-outs on the cheese making process, as well as kefir culture, kefir cheese & bottle of whey. Class size is limited to 16 people.

Basics of Food Fermentation in Hunting Brook Gardens 21 October 2017

On Saturday 21st October Courtney will be hosting a Basics of Food Fermentation workshop from 1-4.30pm.

These will be interactive, hands on learning experiences where you’ll make your own creations to bring home with you. There will be some delicious snacks and samples to taste. You’ll go home with all the knowledge you need to safely start your own home ferments.

Together we will be making sauerkraut, beet kvass and pickles using the magic of lacto-fermentation.

How to brew water kefir

How to brew water kefir.

I think I’ve decided that water kefir could be my favourite ferment of them all.

It’s exciting to me to have such a healthy fizzy herbal soda, where I can control the quality of the ingredients. It’s also done in such a relatively short period of time from start to finish.

I’ll try and lay out the bare bones basics of how easy it is for those of you who ask me!

  1. Dissolve approximately 3 tablespoons of sugar in a mug of hot water. Stir to dissolve. Top up with another 3 mugs of cold water. Add the grains. I usually use a glass vessel of 1-2 litre size for this- and once the grains have been added to the sugar water I cover the top with a cloth or tea towel and rubber band. If I have a spare lemon in the house, I might also squeeze in a half lemon at this point, but this isn’t necessary.
  2. Let this sit out at room temperature for 24-48 hours. Taste from time to time and when it’s at an agreeable level of less-sweetness and not too tart, I strain the grains from the liquid.

Repeat the 1st step with the grains- as they need this sugar water to ‘survive’.

3. Take the strained water kefir liquid and here’s the fun experimental part: either drink as is/ add lemon or flavouring, add to a smoothie or fruit juice if you don’t want carbonation- it’s ready to drink anytime!

or if like me, the fizz is what you’re looking for- bottle the water kefir liquid into a Grolsch beer bottle style clamp down lid bottle (or a plastic bottle for those who err on the side of caution- take note that this can create a dangerous amount of carbonation- be warned!) and sweeten with a cordial, syrup, fruit juice, fresh/dried/frozen fruit of choice, ginger, lemon juice, or a sweetened herbal tea. It’s best if you make it slightly sweeter than your preference at this stage as the extra sweetness will be what creates your carbonation. Clamp down the lid firmly, label your bottle with your flavourings and the date- and leave out another 12-24-48 hours at room temperature, then move to the refrigerator. Chill and enjoy!

The benefit of the plastic bottle, especially as you are learning, is that you can ascertain when the bottle has fully carbonated, as the fizz will expand the plastic bottle and it will become rock-hard. As soon as this happens, you can move to the fridge and enjoy when cool.

Be warned: If you don’t use a glass bottle with the rubber grommets/ gasket, there is a very real risk of the glass exploding.

Best if made and drank within days as the carbonation will keep building up as fermentation progresses.

My favourite flavour combinations:

ginger and lemon

elderflower cordial makes a nearly exact cheat version of elderflower champagne

elderberry or blackberry and ginger

fresh pineapple

fresh apple juice added 1/4 to 3/4 water kefir makes a lovely light effervescent apple fizz.

Wild and Slow food festival at Macreddin Village

I set myself the challenge of participating in this years Wild and Slow Food festival in Macreddin Village. Being that its something I have been looking forward to for the last 2 years (since it last took place), and how much I enjoyed the ethos, the speakers and the stalls- I applied to have my own stall selling my local wildcrafted, foraged wild food products.

I spent 3-4 months this year making apple cider vinegar from scratch using the local organic apples that grow around me in abundance- using natural fermentation methods and Angie’s natural spring water from Carraig Mountain. I produced a raw organic apple cider vinegar that I was proud of! I tested the pH before bottling to be sure that it was under 5pH in order to be safe for food preservation methods- and indeed it tested at about 3-4pH.

I bottled some vinegar live and raw, plain and the rest i infused with local herbs and flowers and organic spices. I made a fiery tonic called Fire Cider- guaranteed to get your circulation going and to clear out any sinus issues. I also made the old gypsy remedy Queen of Hungary’s water. Both recipes in fact were thanks to Rosemary Gladstar- and both were slightly modified to what I had growing locally around me in abundance.

Along with the fire cider, the most popular product was my gomasio. This I made with organic toasted crushed sesame seeds, mixed with sea salt and with the added wild ingredients of local porcini/ cep powder, nettle seeds and wild garlic.

Tinctures, wild berry kefir sodas, seed crackers, sloe gin, and cultures such as water kefir, milk kefir, mother of vinegar and kombucha were also on sale for the weekend.
